BINNORIE FETTA AND WATERMELON SALAD
Ingredients
  • ¼ Seedless, in season Watermelon
  • ½ Medium Red Onion
  • 1 Handful of fresh Rocket Leaves
  • 4-5 Kalamata Olives
  • 150g Binnorie Marinated Fetta
  • 1 Teaspoon of good quality Olive Oil

    Method
  • Cut watermelon into 2cm cubes.
  • Slice the half red onion.
  • Add the watermelon, rocket, olives, red onion and crumbled marinated fetta to a mixing bowl.
  • Drizzle the olive oil over the ingredients.
  • Mix gently so that oil and some of the fetta coat all the other ingredients.
