CHAR GRILLED FILET MIGNON ON ROASTED SWEET POTATO & SAUTÉED BEANS WITH TOMATO, KALAMATA OLIVE & BINNORIE MARINATED COWS MILK FETTA SALSA

(Serves 4)

Ingredients
  • 4 x 200g Grain Fed Beef Fillet Steaks (Tenderloin) - 5-6cm thick
  • 4 Bacon Rashers – Rind off
  • 1 Medium Sweet Potato (Kumara) – Peeled & sliced into 5-10mm thick slices
  • 200g Fresh Green Beans – Topped & tailed, blanched & refreshed
  • Dash of Olive Oil
  • Pinch Sea Salt Flakes & Freshly Ground Black Pepper
  • Salsa:
  • 2 Tbs Binnorie Marinated Cows Milk Fetta - Crumbled
  • 2-3 Vine Ripened or Ox Heart Tomatoes – De-seeded & diced (1cm)
  • ½ Spanish Onion – finely diced
  • 2 Teaspoons Fresh Oregano or Marjoram – Leaves picked & chopped
  • 50g Kalamata Olives – Seed removed & coarsely chopped
  • 2 Teaspoons Baby Capers
  • 1-2 Anchovy Fillets (Optional) – Chopped
  • 1 Tablespoon Flat Leaf Parsley – Chopped
  • ½ Tablespoon Sherry or Balsamic Vinegar
  • 2 Tablespoons Extra Virgin Olive Oil
  • Pinch Sea Salt Flakes & Freshly Ground Black Pepper

    Method
  • Heat BBQ / char grill on low/medium heat & Prepare all ingredients as directed above.
  • Wrap bacon around steak & secure with a toothpick. Season with a little salt, pepper & olive oil just before grilling.
  • Char grill for 8-10 minutes then turn over & grill for a further 6 minutes. Times may vary according to the thickness of the steak & how you like it cooked.
  • Remove steak to the resting rack of your barbeque for 10 minutes before serving. Toss sweet potato with a little olive oil, salt & pepper then grill on the barbecue till tender through (test with a toothpick or knife).
  • Sauté the blanched beans lightly in a little extra virgin olive oil, season with sea salt flakes & freshly ground black pepper.
  • Mix together the salsa ingredients, taste & adjust seasoning if necessary.
  • Arrange sweet potato on a warm plate then top with a few sautéed beans, the cooked steak (remove the toothpick) & finely a spoonful of the salsa.
  • For an added touch, roast some vine tomatoes with some caramelized balsamic vinegar and add as a garnish.
